|Merlot di Toscana I.G.T.
This wine is produced from grapes grown in our little vineyard (5.000 sqm) of Merlot planted in 1999.
The vinification process is carried out in cement vats with natural yeast.
Fermentation with maceration of the skins of 15-20 days.
Maturation in barriques and tonneaux for about one year, light filtering followed by bottling.
The wine is dark red with red fruits aromas, the taste is dry, rich and persistent with strong and balanced tannins.

Harvesting: by hand in small boxes. Harvesting begins in the middle of September
Fermentation: in cement vats for 20 days with repeated pressing, pumping and déléstage
Malolactic fermentation and ageing: in 225 and 300 litre French oak barriques from Allier, half new and half second passage. In wood for 12 months
Bottling: July 2012
Number of bottles: 1.500 Bordolese
Refining: minimum six months in bottles
