As the wine is drawn from the vats, the new wine is separated from the skins, and these are then squeezed to extract any further wine which may be left. In the skins fresh from the press known as “vinaccia” there remains a 4-5% of alcohol which can be retrieved through distillation.

Our Grappa is distilled from fresh Chianti Classico pomace using the traditional copper steam “calderine” or cauldron method in a nearby distillery in Colle Val d’Elsa; they produce 3-4000 half litre bottles for us each year.
